Recipe: Herb-Crusted Sirloin Tri-Tip Roast

Ingredients:

  • 1 Wholly Cow grass-fed Sirloin Tri-Tip roast

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh thyme, chopped

  • 1 teaspoon kosher salt

  • 1 teaspoon freshly ground black pepper

  • Optional: 1 teaspoon smoked paprika for added depth

Instructions:

  1. Prepare the Roast: Pat the Sirloin Tri-Tip dry with paper towels. If there's a fat cap, you may choose to trim it, leaving a thin layer for flavor.

  2. Create the Herb Mixture: In a small bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, and smoked paprika if using.

  3. Season the Meat: Rub the herb mixture evenly over all sides of the roast. For enhanced flavor, cover and refrigerate for at least 2 hours or overnight.

  4. Preheat Oven: Set your oven to 450°F (230°C).

  5. Sear the Roast: Heat a heavy, oven-safe skillet (like cast iron) over medium-high heat. Add a bit of oil and sear the roast for 3-4 minutes on each side until a brown crust forms. 

  6. Roast: Transfer the skillet to the preheated oven. Roast for 20-25 minutes for medium-rare (internal temperature of 130-135°F), or adjust time for desired doneness.

  7. Rest and Serve: Let the roast rest for 10 minutes before slicing against the grain into thin slices.
